Ingredients:

  • 2 pounds lean beef (such as top round or London broil)
  • 1/4 cup soy sauce
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili flakes (adjust to taste)
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper (optional for extra heat)

Instructions:

Meat Preparation (30 minutes + marinating time): Slice the beef into thin strips, about 1/4 inch thick. For easier slicing, partially freeze the meat beforehand.

Marinating (8 hours or overnight): In a bowl, combine soy sauce, Worcestershire sauce, smoked paprika, garlic powder, onion powder, chili flakes, black pepper, and cayenne pepper. Add the beef strips to the marinade, ensuring they are well coated. Cover and refrigerate for at least 8 hours, or overnight for deeper flavor.

Dehydrating (4-6 hours): After marinating, remove the beef strips and pat them dry. Arrange the strips on the dehydrator trays without overlapping. Set the dehydrator to 160°F (71°C). Dehydrate for 4 to 6 hours, or until the jerky is dry but still pliable.

Cooling and Storage (30 minutes): Allow the jerky to cool completely before storing. Keep it in an airtight container to maintain freshness.

Estimated Time:

  • Prep Time: 30 minutes (plus marinating time)
  • Dehydrating Time: 4-6 hours
  • Total Time: 12 hours 30 minutes to 14 hours 30 minutes
