Smoked Whole Turkey

Ingredients:
- 1 whole turkey (10-12 lbs), thawed and giblets removed
- 1/4 cup olive oil
- 1/4 cup kosher salt
- 2 tablespoons ground black pepper
- 2 tablespoons dried thyme
- 2 tablespoons dried rosemary
- 2 tablespoons garlic powder
- 1 tablespoon smoked paprika
- Wood chips (preferably cherry or hickory) for smoking
Instructions:
Preparation (20 minutes): Pat the turkey dry inside and out. Mix olive oil, salt, pepper, thyme, rosemary, garlic powder, and smoked paprika in a bowl. Rub the mixture all over the turkey, inside and out.
Pre-Smoker Setup (15 minutes): Preheat your smoker to 250°F (121°C). Soak your wood chips in water for 30 minutes.
Smoking (6-7 hours): Place the turkey in the smoker breast side up. Smoke until the internal temperature reaches 165°F (74°C), typically about 30 minutes per pound.
