Ingredients:

  • 2 racks of pork ribs (about 3-4 lbs each)
  • 1/4 cup brown sugar
  • 1/4 cup paprika
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 1 tablespoon kosher salt
  • 1 tablespoon ground black pepper
  • For the Honey Glaze:
    • 1/2 cup honey
    • 1/4 cup apple cider vinegar
    • 2 tablespoons soy sauce
    • 1 tablespoon Dijon mustard
  • Wood chips (preferably hickory or applewood) for smoking

Instructions:

Preparation (20 minutes): Remove the membrane from the back of the ribs. Mix brown sugar, paprika, garlic powder, onion powder, salt, and pepper to create the dry rub. Apply it generously on both sides of the ribs.

Pre-Smoker Setup (15 minutes): Preheat your smoker to 225°F (107°C). Soak your wood chips in water for 30 minutes.

Smoking (4-5 hours): Place the ribs in the smoker. Cook until the meat is tender and pulls away from the bones.

Making the Honey Glaze (10 minutes): While the ribs are smoking, combine honey, apple cider vinegar, soy sauce, and Dijon mustard in a saucepan over medium heat. Simmer until the mixture thickens slightly.

Glazing and Finishing (30 minutes): In the last 30 minutes of smoking, brush the ribs with the honey glaze. Continue to cook until the glaze is caramelized.

Resting and Serving: Let the ribs rest for 10 minutes before slicing. Serve with extra honey glaze on the side.
