Maple-Glazed Smoked Salmon

Ingredients:

  • 2 lbs fresh salmon fillets, skin on
  • 1/2 cup maple syrup
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon garlic, minced
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • Wood chips (preferably alder or apple) for smoking

Instructions:

Marinade (10 minutes + 2 hours resting): In a bowl, whisk together maple syrup, soy sauce, brown sugar, minced garlic, black pepper, and smoked paprika. Place salmon fillets in a large ziplock bag and pour in the marinade. Refrigerate for 2 hours.

Pre-Smoker Setup (15 minutes): Preheat your smoker to 225°F (107°C). Soak your wood chips in water for at least 30 minutes.

Smoking (1-1.5 hours): Remove salmon from the marinade and place it on the smoker rack, skin side down. Smoke until the internal temperature reaches 145°F (63°C).

Glazing (5 minutes): During the last 15 minutes of smoking, brush the salmon with additional maple syrup for a sweet, glossy finish.

Resting and Serving: Let the salmon rest for 5 minutes after removing it from the smoker. Serve warm or at room temperature.
