The unit's powerful 6.5-inch fan circulates the heated air horizontally over the stainless steel trays. This N.S.F.-certified dryer has a heating range of 105 degree-165 degreeF and a 99-hour timer that gives you control over a sophisticated two-stage drying program that enables you to set an initial period at a higher temperature (for rapid dehydration) and then a second interval at a lower temperature (for a more gradual drying period to avoid cooking and/or case-hardening of product. The control panel is easy to use and is located in the front of the unit above the double doors for easiest access.
