Ingredients:

  • 3 lbs chicken wings, tips removed, drumettes and flats separated
  • 2 tablespoons olive oil
  • 1 tablespoon kosher salt
  • 1 tablespoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon cayenne pepper (optional for heat)
  • Wood chips (preferably applewood) for smoking

Instructions:

Preparation (15 minutes): Pat the chicken wings dry with paper towels. In a large bowl, mix olive oil, salt, garlic powder, paprika, black pepper, and cayenne pepper. Toss the wings in the mixture until well coated.

Pre-Smoker Setup (15 minutes): Preheat your smoker to 250°F (121°C). Soak your applewood chips in water for at least 30 minutes.
