The smoker/burner unit in this 30-pound meat-smoker cabinet from T.S.M. (model 40101) is mounted on the base of the inside of the cabinet in order to free up more room for the foods you're smoking; the cabinet also features a smoke diffuser that ensures consistent smoke distribution. Made in the U.S.A., T.S.M.'s smokehouse has digital controls that respond to a thermostatic sensor inside the cabinet; the result is superbly precise control of your smoking process and the unit's digital thermometer makes sure you cook food to measurably safe temperatures. All major components of the smokehouse are stainless steel. Large commercial casters on the rear of the unit lend the unit mobility; there's also a tow handle. Purchase of this unit includes four shelves; additional shelves are available separately; this smokehouse holds up to 11 shelves in all. This professional-caliber smoker is great for smoking pulled pork, brisket, sausage, bacon, vegetables and cheeses.
