Formerly known under the product name of Prague Powder #1, and now known as T.S.M.'s Insta Cure #1 (model 11-1013), this 5 pound tub contains a basic cure that can be used to safeguard whatever meats you have that will be canned, cooked or smoked. This curing powder will slow the process of spoilage and is intended to prevent contaminations such as botulism. Consisting of sodium nitrite and salt, this cure is intended for use with most meats, including bacon, ham, corned beef, poultry, luncheon meats, fish and more. It's been established that sodium nitrite has been found to restrain and inhibit the growth of microorganisms (such as E. Coli) that cause disease. It also gives color and taste to meat and inhibits lipid oxidation (which leads to rancid meat. Curing meat with this product is simple: utilize one level teaspoon of product for every five pounds of meat; one pound of Insta Cure can be used to process up to 480 pounds of meat.
